In contrast to young (not matured) grappas, sealed grappa barricata has to mature in wooden barrels after distillation.
Aging consists in keeping the distillate in wooden barrels or barriques (typically oak, ash and cherry) for a specific time; which are not sealed as this would prevent the process of enrichment of the distillate.
The term grappa “Barricata” denotes a wooden barrel of French origin with a capacity of 225 to 228 liters; used for the fermentation or aging of wine.
Born as a unit of measurement of volume (about 225 liters); the uniqueness of the keg lies in its ability to allow greater oxygenation of the contents through volume/surface contact at lower cost than larger kegs.
