Summer truffle carpaccio is made exclusively from fresh, seasonal truffles.
The internal grain and the maturation of the summer truffle carpaccio guarantee the same feeling that one gets when tasting fresh truffles. The sterilization of the jars changes the color of the grain of the carpaccio, which is usually white in fresh truffles, and takes on the color of the truffle flesh.
